Fried Oysters

Around here, this is a tasty traditional holiday treat.

Heat a layer of cooking oil in a frying pan. (You don’t want the oysters to be covered, so don’t go overboard.) Rinse the oysters. Dip them in cracker meal (in the South, you can buy this boxed — otherwise, finely smoosh a lot of saltine crackers), beaten egg, and then again in the crumbs.

Fry them in batches, turning once. Don’t crowd the pan! Drain them on paper towels. If you want more flavor, season the crumbs with salt, pepper, and your favorite spices before coating the oysters.

Mix up some cocktail sauce to go with them by combining ketchup, prepared horseradish, a bit of Worcestershire sauce, and a bit of white vinegar.
