Easy-Peasy Cheesy Potato Casserole

I need to stop making — and sharing — so many casseroles, but they’re such an essential part of traditional Southern cooking. This one is particularly classic, due to its use of pre-cut frozen potatoes and canned soups. It’s much easier to make now, too, given that you can buy pre-shredded cheeses.
Thaw one package of frozen hash browns. Mix them (in a REALLY big bowl) with 2 cans of potato soup, 16 ounces of sour cream, 2 cups shredded cheddar cheese, and 1 cup grated Parmesan cheese. Put it all into a greased 13″ x 9″ baking dish and bake at 350 degrees for 40 minutes.
I’m sure this dish violates most recommended diets, but it’s lovely to eat. It rewarms well, and for more of a one-dish lunch, you can add chopped chicken or ham. It’s easy to make and great to share for groups.
